Perfectly ripe berries
release their juice...
Perfectly ripe, freshly picked Kamchatka berries are extremely fragile. Their delicate skin is easily damaged, which can lead to juice leakage.
This is a completely natural phenomenon, and does not mean that the fruit is spoiled.
On the contrary, the leaking juice is a testament to their perfect ripeness and freshness!

- Boil the fruit, sugar and water over low heat for 20 minutes.
- Then pour the cooled juice through a thick sieve into bottles.
- If you want to prolong its freshness, it is worth pasteurizing the bottles with juice in water or in the oven.
